Adventures in Cooking: Pancakes

I made honest to goodness from scratch pancakes this morning.  I wanted pancakes for a while but someone in my house isn't fond of them.  Of course I could have gone to IHOP and ordered the free pancakes the other day, but I like the smaller sized circles versus the ones that take over your plate and you end up eating 1/3 because you had bacon eggs hash browns in addition to the side of pancakes, then you feel guilty because somewhere in this country or around the world people are starving and you couldn't eat 3 10" diameter pancakes.

I think the key to pancakes is fresh baking powder.  if the baking powder isn't fresh your pancakes don't rise and you have crepes instead.   You can see these rose up to about 1/2 inch, and then inside was soft and velvety.
