This morning's breakfast was a casserole of sorts. I didn't use a recipe I just threw some stuff together. But it turned out pretty good.
1/2 Pakage Hash Browns (I used the southwestern one)
1/2 pound Sausage (I used the Jimmy Dean Italian)
1/2 package frozen seasoning blend (chopped peppers & onions)
5 Eggs
1/4 C Milk
Salt
Pepper
3/4 C Shredded Cheese
Turn your oven on to 400°F.
Cook the Hash Browns according to the package instructions. Brown the sausage in a separate pan.
Once the sausage is browned pour into a greased casserole dish.
Put your frozen veggies into the sausage pan and cook until the onions are opaque.
Once the hash browns are cooked place into casserole dish with sausage.
Combine eggs and milk, whisk until combined. Add into casserole dish.
Add 1/2 cup of the shredded cheese into casserole dish saving the remaining 1/4 cup for later
Mix contents together
Put into 400°F Oven for 20 minutes
Add additional cheese to top of casserole and put back into oven for an additional 5 minutes or until cheese is melted and brown
Serve immediately.
I also through in a half a bottle of mushrooms cause they were laying around. I don't get what people find so hard about cooking.
